Leftover Turkey Casserole

As usual I made way too much turkey for Thanksgiving. This year it was especially bad, because I didn’t know that my sister was also making a large ham. So what’s a girl to do with all this extra turkey? After all there are only so many turkey sandwiches you can eat before getting completely sick of them. Thankfully I came across this Thanksgiving leftover casserole recipe. I made it for dinner today and it was great. The flavor was completely different from the Thanksgiving food we’ve had since Thursday which made for a nice change.

I haven’t had a chance to try this yet, but I’m sure this casserole would freeze well. I love cooking for the holidays, but am not always so sure what to do with all the leftovers. Recipes like this casserole are a great way to use up extra turkey or even ham for that matter. I think I’ll make up two more batches tomorrow to put in the freezer. I’m sure they will come in handy on a busy weeknight or even a Sunday night when we’ve been out and about all day (which is going to happen a lot with our busy schedule in December).
